What's Cookin'...

I don't think of myself as particularly talented in the kitchen. I enjoy cooking and I do what I need to get by. But sometimes I surprise myself. Here are some of my recent triumphs...

1. Oven-baked spinach chips. Fresh baby spinach, toss with a little olive oil just to coat the leaves, spread on parchment paper covered baking tray, sprinkle with sea salt, bake 250F approx 30 min. They come out crispy and melt in your mouth. You have to eat them the same day though. By the next day they are limp and chewy.

2. Margaritas free of refined sugar! Just fresh squeezed lime juice, water, crushed ice, honey, sea salt, and tequila. So yummy!

3. Peanut butter cookies! Wheat and refined sugar free. Just almond flour, butter, natural peanut butter, honey, eggs, baking soda. They are so delicious!

Artist Showcase... Carmen Herrera

“I do it because I have to do it; it’s a compulsion that also gives me pleasure” - quote by artist Carmen Herrera about painting. I love it because that's how I feel about comics and art in general. It is a compulsion. I love Ms. Herrera's story because she's worked all her life but has only recently become recognized  - at the age of 94.
